Our Story

Hello, I’m Rita — your neighbor in Odessa, Fl and a guardian of fermentation alchemy. My promise: only organic flour, water, salt, and our wild sourdough starter touch your bread. No additives. No compromises. Just honest bread, kneaded with soul.

My journey began in my grandma’s sun-dappled village kitchen. Summers tasted of woodsmoke and her crusty rye — a flavor that still lives in my bones. She’d pull loaves from the brick oven, whispering: “Baby, real bread isn’t made with hands. It’s made with time.” Those words became my compass.

That lesson led me to study under masters of traditional breadcraft — including bakers trained in the Caprano method, a centuries-old European approach rooted in hand-fed sourdough and slow fermentation. I learned the art of living bread from a mentor who taught me: “Bread isn’t just baked. It’s raised with time, patience, and care.”
